With winter approaching, it’s important to stay full and happy. We teamed up with Celeste Wilson of The True Spoon to bring you a wonderful hearty lentil bowl, perfect for autumn.
- 10 stalks broccolini
- 1 teaspoon olive oil
- 10 oz crimini mushrooms, sliced
- 3 oz shiitake mushrooms
- 1 pound cooked lentils
- 1/2 lemon, juiced
- 1/2 teaspoon garlic salt
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 teaspoon pepper
- 2 tablespoons parsley, chopped
- 1/2 cup golden raspberries
- 1/4 cup micro greens
Preheat oven to high broil.
Add broccolini to a non stick baking sheet, spay with olive oil spray, broil for 5 minutes.
While broccolini is broiling add olive oil to a large pan, add in mushrooms, cook for 5 minutes stirring occasionally, remove from heat.
Remove broccolini from oven, set aside to cool.
Add lentils, lemon juice, salt, cayenne pepper, pepper, and parsley to a large bowl, stir until well combined.
