In honor of St. Patrick's Day, we thought we'd create 3 different ways to healthfully celebrate the holiday with making something we love - toast! Why not get a healthy start before we imbibe on tasty beers and Irish food?
Each of these toasts are ridiculously easy to make and make a great, healthy snack. Add a side of fruit or veggies to make it a filling meal.
Ahhh, a classic. We served this up two ways. First, we mashed up an avocado and spread it across the toast. Then we used a fork to create a crosshatch pattern. The second method is to cut the avocado in half, carefully peel the skin away, and then slice. Instagram-pretty! Top with course salt, ground pepper, and some red chili flakes.
Considered a superfood, avocados are full of fiber, heart-healthy monounsaturated fatty acids, and antioxidants. They even have more potassium than bananas!
A spin on cucumber sandwiches, we simply spread cream cheese across our toast, and topped it with sliced cucumbers.
Cucumbers are full of water which make them a cool and refreshing treat! With vitamin K, B vitamins, copper, potassium, vitamin C, and manganese, cucumbers can help you to avoid nutrient deficiencies that are widespread among those eating a typical American diet.
ARUGULA AND HUMMUS TOAST
A pretty way to eat your greens is to top your toast with your favorite hummus and arugula. The peppery taste of these leafy greens adds a bite to your toast.
Arugula is high in nitrate which have been shown to lower blood pressure, reduce the amount of oxygen needed during exercise, and enhance athletic performance.
